Lemon Cupcakes

240g butter (soft)
140g sugar
4 eggs (beaten)
80g milk
2 lemon zest (grated)
260g self raising flour, sift (I use plain flour + 2 tsp baking powder)

1. Cream butter and sugar till light and creamy.
2. Add in eggs gradually ensure that the mixture do not curdle.
3. Lastly add in milk, lemon zest and stir well.

-Bake at 175c, 15 mins.
-Makes 19.
