Spicy Chicken Wings with Avocado Salsa

Chicken Wings Ingredients:
600g Chicken Wings
1 tbsp fish sauce
2cm piece gula melaka, chopped
2cm knob ginger, finely grated
1 long chilly, finely chopped
1 shallot, chopped
2 garlic, chopped
1 tbsp vegetable oil

1. Mix fish sauce, gula melaka, ginger, chilly, shallot, garlic and oil together. Pour over chicken wings and marinate in the fridge for at least 4 hrs. (overnight if possible)
2. Preheat oven 180C.
3. Place chicken wings in a large roasting plate or bowl and roats
Avocado Salsa Ingredients:
1 avocado, chopped
1/2 punnet cherry tomatoes, quartered
1/2 small red onion, finely sliced
Some fresh coriander leaves
1 tbsp extra virgin olive oil
Sea salt and some ground black pepper, to taste.

Place avocado, cherry tomatoes, red onion, coriander, lime juice, olive oil, salt and pepper in a bowl and mix well.
